I thought I knew ramen. Tokyo put me back in my place. Those who know me know it: eating well matters a lot to me. Since I moved to Japan, I've tried a stack of addresses, solo, with family, between two client calls. Here's my current top, simple and effective, for your next Tokyo trips.
5 — Hujishiro
Comforting bowl, straight to the point. Perfect when you want a classic without frills, no surprises, just the right move.
4 — Menya Kokoro
Signature mazemen, top textures, punchy without being heavy. A good entry point for those who want to step out of "classic broth" ramen.
3 — Afuri
Yuzu shio all in finesse, very clean, very crisp. The place that wins over anyone who thinks ramen is heavy. Spoiler: it's the opposite.
2 — Tamotsu
Deep broth, salt / fat / umami balance that makes you want to take another spoonful, then another. The seasonal duck special is worth the trip on its own.

My #1 is intentionally kept for direct contacts: it's a neighbourhood spot, one I care about, and I don't want to see it overrun by guidebooks. If you're planning a Tokyo trip, ask me.
Why this obsession?
Ramen is one of the most codified dishes in Japanese cuisine. It's also the one that taught me to slow down: you queue, you order at the ticket machine, you sit, you eat in 12 minutes, you leave. No small talk. Just focus, respect for the craftsman and the product. A mini-ritual that captures what I love most about Tokyo life.
